Like I said in a previous article, Chili is perfect when the weather is cold outside. But if the only way you could serve chili is in a bowl with crackers, it would not be worthwhile.
There is more than one way to serve chili. Some people, including myself, love it on a hot dog. This is affectionately known as a chili dog. If you really want to use your imagination, you can serve it in a salad, or a taco salad. But my favorite way to serve chili is topped over a baked potato.
This is my favorite way to serve chili. It is also my favorite way to eat chili. Serve it on a baked potato, and you will feel like you are in paradise. This is absolutely delicious.
All you have to do is bake the potatoes, cut a gash down the middle, let your imagination run wild with you and just enjoy.
If you want the baked potato to be just right, this is what I recommend. Wash the potatoes thoroughly. Lightly apply a layer of Crisco Shortening on the outside skin of the potato. For the best taste possible, use the buttery flavored Crisco. Next, sprinkle a little Kosher Salt on a piece of aluminum foil, and roll the potato in the Kosher Salt. Make sure you use Kosher Salt. This is more course than regular salt, and has larger grains. It does make a difference in the taste. Finally, wrap the potatoes, and bake them on high for an hour.
After you take the baked potato out of the oven and cut it down the middle, you are limited only by your own imagination. I like to add butter or margarine to the potato while it is hot, so the butter will melt right away. A little cheddar cheese over the butter will work just fine. Pour the chili over the potato, top it with sour cream and you are in business my friend.
This is the basic way to do this. You can also add whatever suits your taste buds. Some people add chives. Some add chopped green onions. But whatever you add to this scrumptious dish, it will be perfect every time.
